Jurakudai Junmai Daiginjo Revolution from Sasaki Shuzo in Kyoto uses Yamada Nishiki polished to 40% and is brewed by hand using the Kinmeisui and Ginmeisui waters associated with tea master Sen no Rikyu. Fruity ginjo aroma and an elegant, transparent palate reflect the brewery's commitment to minimal filtering.
