Junmaishu Itaru Karakuchi Genshu is a dry, undiluted pure rice sake from Henmi Shuzo on Sado Island, Niigata, with an elevated alcohol content of around 18 degrees that reflects its undiluted state. The combination of dry character, bold rice umami from yamahai fermentation, and full-strength alcohol creates a concentrated, assertive sake suited for pairing with richly flavored dishes.
