Description
Junmai sake from Fukuoka's only surviving inner-city brewery, using a blend of Yamada Nishiki for the koji rice and Yume Ikkon for the kake rice, both polished to 65%. Low-temperature ginjo-style fermentation is applied even to this junmai tier, yielding a clean, dry style the brewery describes as well-suited to Genkai Sea seafood. The brewery has received gold awards at the Fukuoka Prefectural Sake Competition multiple consecutive years.
