Description
Kame no O, one of Japan's oldest documented sake rice varieties, nearly went extinct before being revived in the late 20th century, and Akitahomare Shuzo uses it here in a junmai ginjo expression. The rice is known for producing sake with distinctive herbal, earthy complexity and a bold umami character that sets it apart from modern high-polishing rice varieties. Fermented with Akita soft water, this sake honors a historic grain while expressing the prefecture's delicate brewing touch.
