Junmai Ginjo Sasanotsuyu is a junmai ginjo from Nakagawa Shuzo in Noto, Ishikawa, whose name Sasanotsuyu means dew of bamboo grass, suggesting delicacy and natural freshness. Brewed without added alcohol with rice polished to at least 60%, this sake develops fruity, refined aromas alongside a clean, pure body characteristic of the no-added-alcohol ginjo style. The Noto Peninsula's cold winters and mineral-rich water support the low-temperature fermentation needed for ginjo's characteristic fragrance.
