Junmai ginjo polished to 55%, produced at a Sabae, Fukui brewery founded in 1753 that uses soft spring water from the Hino River and locally grown Gohyakumangoku rice. The toji trained under Noto, Niigata, and Tamba master brewers, bringing a multi-regional perspective to a Fukui-centered ingredient philosophy.
