Jousenhakutaka Namatyozoshu from Hakutaka in Nada, Hyogo, is a jousen-grade sake stored unpasteurized throughout maturation and pasteurized only at bottling, giving it heightened freshness relative to fully pasteurized versions. Hakutaka, established in 1862 and Japan's sole designated Goryoshu supplier to Ise Jingu since 1924, brings this single-pasteurization technique to its approachable tier. The result is a lively, aromatic table sake with Nada's characteristic clean, dry profile.
