Description

Akebono rice polished to 65% is slowly pressed using a rare wooden fune (traditional press) that applies minimal pressure, drawing out a soft, mellow texture characteristic of this Kurashiki, Okayama brewery's hand-crafted approach. Founded in 1909 and guided by Bitchu toji tradition, the brewery produces a gentle, approachable honjozo suited to the white-walled townscape of Kurashiki.
