Honjozo Notojosen Kimpyoshirakoma is a honjozo from Nakagawa Shuzo in Noto, Ishikawa, carrying the Kimpyoshirakoma brand name, which translates to golden gourd white horse and serves as the brewery's flagship label. Honjozo polishes rice to at least 70% and adds a measured amount of brewer's alcohol to produce a light, fragrant sake with clean mineral character. Cold coastal waters filtered through the Noto Peninsula's limestone geology provide the mineral-rich brewing water underlying this style.
