Description
A junmai ginjo from Komatsu Shuzojo's Hojun label, brewed with Omachi rice and subjected to the hiire pasteurization process. Pasteurization stabilizes the sake and allows the Omachi grain's deep, rice-forward flavors to settle and integrate. Oita Prefecture contributes soft regional water that rounds out the texture.
