Miyama Nishiki polished to 60% undergoes yamahai starter cultivation at this Akita brewery with over 470 years of history, developing firm natural acidity from Chokai Mountain spring water. Released after a winter season of low-temperature fermentation, it shows the structured, complex profile characteristic of the No. 15 maruhi selection.
