Heianshijin Black Daiginjo is a daiginjo polished to 50% from Sasaki Shuzo in Kyoto's historic Fushimi district. Fushimi's famously soft water, known as Fushimizu, is renowned for producing elegant, refined sake styles that have shaped Kyoto's brewing tradition for centuries.
