Ginjo Taga is a ginjo polished to 60% from Taga in Shiga, founded in 1711 as one of the region's oldest breweries. Drawing on the hard calcium-rich water flowing from the Suzuka Mountains and Shiga's mineral-rich aquifer, the sake develops a clean, dry-leaning ginjo profile.
