Gensui Daiginjo Tobingakoi is collected from individual 18-liter tobins (traditional glass jars) after gravity-pressing, capturing the finest fraction of Yamada Nishiki daiginjo fermentation at Gensui Shuzo in Kurayoshi. This tobin-selected expression from Tottori's Field Marshal brewery represents the pinnacle of single-lot artisan daiginjo.

The former sake brewery is a corner of Kurayoshi's symbol, the white wall storehouse along Tamagawa. The initial sake inscription went to "Asahi Masamune" early in the Taisho era. Currently, in a well -maintained environment, he uses sake brewing that values the taste of nature, while protecting the handed techniques.
