Gensui Daiginjo Hachikenshi uses Tama Sakae, a sake rice indigenous to the Tottori-Shimane region, in a daiginjo expression from Gensui Shuzo in Kurayoshi. Tama Sakae's distinctive earthy depth takes on elegant daiginjo aromatics under Gensui's meticulous polishing and cold fermentation in the Hiezu River basin.

The former sake brewery is a corner of Kurayoshi's symbol, the white wall storehouse along Tamagawa. The initial sake inscription went to "Asahi Masamune" early in the Taisho era. Currently, in a well -maintained environment, he uses sake brewing that values the taste of nature, while protecting the handed techniques.
