Description
Tamasakae rice polished to 60% is fermented via the labor-intensive kimoto method at Umetsu Shuzo, then diluted with water (kasui) for a balanced 14% finish. Kimoto-zukuri relies on naturally occurring lactic acid bacteria and roughly doubles the fermentation period, yielding the layered acidity and firm structure the style is known for.

The heart of the sake brewing, which has been handed down since its foundation, is a stubborn commitment unique to a small warehouse, with all the journey and effort. From the preparation in 2005, all sake was changed to rice and rice koji only.
With the pride as a crowned sake, and being involved in local agriculture in the future, the desire to "aim for a powerful pure rice sake brewing" is deepening.
