Description
The Tempo junmai ginjo from Umetsu Shuzo uses naturally sun-dried sake rice and brings together the structured character of a pure rice sake with a restrained ginjo fruitiness. The Tottori brewery, founded in 1865, uses exclusively rice and rice koji, drawing its brewing water from Mount Daisen.

The heart of the sake brewing, which has been handed down since its foundation, is a stubborn commitment unique to a small warehouse, with all the journey and effort. From the preparation in 2005, all sake was changed to rice and rice koji only.
