Funaotaki Honjozo Karakuchi uses Wakamizu rice polished to 70% from Shibasaki Shuzo in Gunma. Wakamizu is a variety suited to the Kanto region's brewing conditions; the karakuchi (dry) style and Haruna mountain water produce a clean, sharply finishing honjozo.
