Description

Benisashi plums from Fukui Prefecture and rock sugar are steeped in 1980-vintage aged sake to form this koshu umeshu. The long ambient-temperature aging of the base sake in the earthen Gifu storehouse, through more than four decades of seasonal temperature cycles, builds the concentrated sweetness and depth that characterize the older vintages in this series.
