Description
Made with Benisashi plums from Fukui Prefecture and rock sugar in 1978-vintage aged sake, this koshu umeshu draws on a base described as dry with pronounced umami. The long room-temperature maturation in the earthen-walled Gifu storehouse rounds and integrates those qualities with the plum fruit acidity.
