Hito Gokochi rice polished to 59 percent forms the base of this josen sake, which uses Nagano R yeast to develop a lively character with gentle apple-like acidity alongside clean rice umami. The North Alps subalpine spring water gives the sake an exceptionally soft, clean palate.
