Daiginjo namazake made from Omachi rice polished to 40%, brewed during the coldest part of winter as a special cold-season pressing at Okayama's oldest brewery, founded in 1688. Omachi, known as a flavor-forward variety with wild complexity and long finish, is the signature rice of this historic Akaiwa-area kura.
