Description

Daiginjo brewed from Hyogo Yamada Nishiki polished to 35% at this Shiga kura founded in 1711, using high-alkalinity water from the Suzuka mountains that produces a characteristically crisp sake style. The sake's fruity ginjo aromatics reminiscent of apple and pear are balanced by appropriate sweetness and a clean finish. A flagship premium expression from this long-established Omi producer.
