Daiginjo Shussejo is the flagship premium offering of Hamamatsu Shuzo, a brewery in Shizuoka whose brand name references Hamamatsu Castle, nicknamed Shusse-jo (Castle of Promotion) because most of its daimyo governors went on to higher office. The daiginjo is crafted with Yamada Nishiki rice polished to 40% and uses native Shizuoka yeast strains, producing a refined, highly aromatic sake at 16% ABV. This expression exemplifies Shizuoka's reputation for elegant, ginjo-style brewing.
