Gohyakumangoku rice polished to 40% and fermented with FK-501 yeast, this daiginjo is cold-aged for three or more years in refrigerated storage by a Fukui brewery founded in 1753 in Sabae City. The extended aging rounds the elegant ginjo aroma into a mellow, well-balanced profile with a polishing ratio and sake meter value (+5) pointing toward a refined dry finish.
