Daiginjo Shigasakari Kinran uses Yamada Nishiki polished to 40% from The Omi Sake Brewery in Shiga. Named for the gold-and-blue brocade motif inspired by the Eichizen red maple forests and the Aichi River, it features a melon, pear, and flower aroma with a gentle sweetness and fresh acidity; brewed with organic Shiga Yamada Nishiki, Suzuka Mountain spring water, and Kyokai 1401 and 14 yeasts.
