Asahimori (旭盛) Daiginjo, named for the rising sun, is a premium expression from Egashira Shuzo in Omuta City, Fukuoka, a brewery with roots in the Edo period (miso/koji from 1830, sake from 1897). This brewery specializes in long-aged sake, producing 10-, 20-, and 30-year expressions, and this daiginjo at 49% polishing reflects the same precision applied to its aging program.
