Choyofukumusume Saitonoshizuku Junmai is produced at Iwasakishuzo in Yamaguchi using Saito no Shizuku, a sake rice variety developed specifically for Yamaguchi Prefecture. As a junmai designation, no brewing alcohol is added, resulting in a sake driven entirely by the character of local rice and water. The Saitonoshizuku variety is valued for producing sake with clean, round flavor and regional distinctiveness.
