This honjozo from Noguchi Shuzo in Ishikawa is crafted under the direction of legendary master brewer Naohiko Noguchi, whose institution was founded in 2017 to preserve his techniques for future generations. Made with a focus on sharpness of finish, it is valued as a food sake by sushi chefs and washoku cooks, and can be enjoyed cold or as a warm sake.
