Description
Choseimai Chokodaigin 25 represents one of the most extreme expressions of aged sake craftsmanship at Kuze Shuzo, with a quarter-century of cellaring applied to daiginjo brewed from the brewery's own Choseimairice. The result is a profoundly concentrated, amber-toned sake that reveals layers of toasted nuts, dark dried fruits, and an almost sherry-like complexity.

Since 1786, the company has been making its own sake rice (long -time rice) in its own rice field and has been making sake in rice.
The prepared water is used using the spring water (soft water) of the company's groundwater (hard water) and the sacred water "Shimizu".
