Chogun Junmaihattannishiki is a pure-rice junmai from the Chogun brand brewed with Hattan Nishiki, a sake rice variety developed in Hiroshima prefecture known for producing sake with a mild, soft flavor and gentle acidity. Using a rice from a different region introduces an interesting cross-regional character, resulting in a junmai with a rounded, slightly subdued profile compared to locally grown rice varieties. The combination of Hattan Nishiki's characteristics with Niigata's soft water creates a harmonious, gently flavored expression.
