This autumn-release Junmai from Arisawa is brewed with Akebono rice polished to 55% and aged through summer to develop a mellower, more rounded character than fresh-pressed sake. The 'akiagari' designation marks sake that has matured and improved after the summer heat, reflecting the brewery's careful seasonal brewing cycle.
