This core Junmai from Arisawa in Kochi uses Akebono rice polished to 55%, fermented in the brewery's carefully controlled cellars to produce a sake with pleasant acidity and clean rice umami. Arisawa has been brewing under the Bunkajin label since 1877, earning ten consecutive gold medals at Japan's most prestigious sake competition.
