Bokusui Honjozo is a honjozo from Takeshige Honke Shuzo in Nagano's Saku region. The brewery uses Daisetsuzan spring water from the Tateshina foothills and 100% Nagano-grown rice; the long kimoto tradition at this brewery shapes even the honjozo with a firm, complex umami base.
