Migakigowari ('polished to 50%') is the Junmai Daiginjo benchmark from Azumanofumoto Sake Brewery in Nanyo, Yamagata, brewed with rice refined to 50% at a brewery that has won ten consecutive gold medals at Japan's National New Sake Appraisal. Founded in 1896 at the foot of a regional shrine, the brewery uses Yamagata's cold climate and pristine water to produce sake of exceptional clarity and aromatic refinement.
