Finished with malolactic fermentation that converts malic acid into lactic acid, this daiginjo develops a mellow, juicy, and fruity profile with a sour sweet balance. The technique, developed in Yamagata, gives the sake beautiful overall balance. Its softened acidity sets it apart from a standard daiginjo.
