Azumamine Shuzo pairs the historic Omachi rice variety, one of Japan's oldest surviving sake rice cultivars originating from Okayama, with Iwate's cold-climate ginjo fermentation at 50% polishing for this Junmai Ginjo. The combination of an ancient rice variety and a brewery founded in 1781 creates a sake steeped in historical depth and natural umami.

Azuma Ren Sake Brewery was founded as Shiwa Sake Brewery in the first year of Tenmei (1781) in the middle of the Edo period. The predecessor was the "Gonbei Sake Store", which made the first "clear liquor" in Iwate during the Enpou (1670s), which led to the presence of this warehouse later.
In this store, we inherit the main stream of southern drills, and we are making sake with a heartfelt sake with a small amount of 500 stones a year, which reaches all of the preparation, aiming for "Iwate -like liquor".
