Azumamine Shuzo crafts this Ginjo with Miyama Nishiki, a cold-resistant sake rice variety suited to Iwate's mountainous, snow-heavy climate, using low-temperature fermentation to develop a delicate floral aroma. As a brewery founded in 1781 in Shiwa Town, the ancestral home of the Nanbu Toji guild, it brings centuries of northern Japan brewing expertise to this aromatic expression.

Azuma Ren Sake Brewery was founded as Shiwa Sake Brewery in the first year of Tenmei (1781) in the middle of the Edo period. The predecessor was the "Gonbei Sake Store", which made the first "clear liquor" in Iwate during the Enpou (1670s), which led to the presence of this warehouse later. In this store, we inherit the main stream of southern drills, and we are making sake with a heartfelt sake with a small amount of 500 stones a year, which reaches all of the preparation, aiming for "Iwate -like liquor".
