Azakura Shuzo's Omachi Junmai Ginjo uses one of Japan's oldest surviving sake rice varieties polished to 50%, bottled unfiltered, unpasteurized, and undiluted for a raw, vibrant expression. Omachi, originating from Okayama Prefecture, is prized for producing sake with deep umami, full body, and a distinctive mineral quality that distinguishes it from modern sake rice.
