Yamada Nishiki polished to 40% forms the base of this pasteurized daiginjo from Asahimatsu Shuzo in Yame, Fukuoka. Brewed in the traditional winter-only cold fermentation style established at the brewery's founding in the Taisho era, it delivers a vibrant ginjo aroma and a mellow, rounded palate. The brewery's characteristic hydraulic press produces a sake with no off-flavors.
