This 1992 vintage koshu from Asahimatsu Shuzo in Fukuoka has been maturing for over three decades, developing the amber color, caramel depth, and concentrated umami characteristic of extended sake aging. Brewed with Reihou rice polished to 60%, it exemplifies the transformation that careful long-term aging can bring to a pure rice sake.
