Reihou rice polished to 60% is the base for this junmai from Asahimatsu Shuzo, sharing the Shofu name with the ginjo expression and brewed with the same winter-only hand-crafting approach. The pure rice character of the junmai classification allows the rice umami and gentle acidity to express themselves without added alcohol. Soft Yame groundwater completes the clean, honest profile.
