Yamada Nishiki polished to 40% forms this daiginjo from Yamanaka Shuzo in Kakegawa, Shizuoka Prefecture. Named after the Tokugawa family crest, the brand has earned gold at the National Appraisal and multiple governor's awards at the Shizuoka competition, and the sake is brewed with water drawn from 100 meters underground in the Southern Alps system.
