Amatsushinriki Namasake is a raw sake from Nishioka-Kawamura Shuzo in Fukui, brewed with a revived heirloom rice variety called Shinriki, which was revered before World War II but had fallen out of cultivation. Released as a nama, it captures the freshness of new-press season with a direct, unfiltered character.
