While Akishika is best known for its muroka nama genshu lineup, this expression demonstrates how the brewery's organically grown rice and high-dissolution koji method produce depth that remains compelling even after pasteurization. The finished sake has the refined grain complexity expected of daiginjo polish alongside the structured, food-friendly character the brewery consistently pursues.
