Description

Oku Shikanosuke is one of Akishika's highest-tier expressions, a Junmai Daiginjo produced via fukurozuri, the bag-hanging method in which filled cloth sacks of pressed mash are suspended over a tank and allowed to drip freely under gravity alone, with no mechanical pressure applied. Only the middle fraction (nakadori) of that drip is collected, representing the most refined and balanced portion of the run. The resulting sake is the brewery's most delicate, with extraordinary clarity and depth drawn from Akishika's own organically grown rice.
