Left unpasteurized and bottled immediately after pressing, the sake is lively and brash, with bold acidity and raw rice character that reflect Akishika's no-charcoal, no-dilution approach adopted since 2004. This is the brewery at its most spontaneous, capturing the energy of the new harvest.
