Tamajiman Junmai Ginjo Genshu from Ishikawa Shuzo in Fussa, Tokyo, combines the fruity, aromatic character of the junmai ginjo grade with the concentrated richness of undiluted genshu bottling. Brewed with rice polished to 60% or less and fermented with ginjo-style care, this sake offers pronounced fruit notes alongside the fuller body typical of genshu. The Tama River's soft groundwater lends a smooth, rounded quality to this Tokyo expression.
