Tamajiman Daiginjo from Ishikawa Shuzo in Fussa, Tokyo, is a showcase of the brewery's commitment to premium sake production in an urban setting. Founded in 1863 and situated along the Tama River, Ishikawa Shuzo uses the river's clean, soft groundwater to brew sake with delicate fruity aromas and an elegant, refined palate. The daiginjo grade requires rice polished to 50% or less and meticulous low-temperature fermentation.
