Setchuubai Ginjoshu is the ginjo expression from Maruyama Shuzojo in Joetsu, Niigata, a brewery established in 1897 that maintains an old-fashioned, full-bodied and slightly sweet style at odds with the region's prevailing dry trend. Brewed using lid-koji (futa-koji) technique and softly mineral well water of near-zero German hardness, it presents a smooth texture, a subtle ginjo nose, and a gentle astringency that tightens the finish.
